A comforting and hearty creamy potato soup that is easy to make and perfect for chilly days.

Ingredients

  • 3 large Potatoes (starchy like russets)
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream
  • 2 tablespoons Butter
  • Salt and Pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until it’s translucent, about 5 minutes. Then, stir in the minced garlic and cook for another minute until fragrant.
  2. Prepare the potatoes: While the onions are cooking, peel and cube the potatoes into small, even-sized pieces.
  3. Simmer the soup: Add the cubed potatoes and broth to the pot. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 20 minutes or until the potatoes are tender.
  4. Blend it smooth: Once the potatoes are cooked, carefully blend the soup until smooth using an immersion blender or in batches using a regular blender.
  5. Add cream: Stir in the heavy cream and season with salt and pepper to taste. Heat gently over low heat until warmed through.
  6. Serve and enjoy: Ladle the soup into bowls and add your favorite toppings.

Notes

Use starchy potatoes like russets for the creamiest texture and don’t rush the sautéing for the best flavor.
