Ingredients
2 cups all-purpose flour
1 ½ cups granulated sugar
1 cup pumpkin puree
1 cup vegetable oil
3 large eggs
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
1 tsp vanilla extract
1 cup unsalted butter, at room temperature
3-4 cups powdered sugar
2-3 tbsp milk
1 tsp vanilla extract
Orange and green food coloring
Optional: candy decorations for eyes and mouths
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two pumpkin-shaped cake pans.
Combine the pumpkin puree, vegetable oil, eggs, and vanilla extract in a large bowl. Whisk until smooth.
Sift together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
Pour the batter evenly into the prepared pans. Bake for 25-30 minutes, or until a toothpick comes out clean.
Allow the cakes to cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
Beat the softened butter in a large bowl until creamy. Gradually add powdered sugar and milk, mixing until smooth.
Divide the frosting into two bowls. Color one with orange and the other with green food coloring.
Assemble by placing one cake layer on a serving dish, spreading frosting on top, then add the second layer. Cover with orange frosting and pipe on green frosting for leaves.
