Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk
  • Black fondant or chocolate candies shaped like bats for decoration

Instructions

  1. Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy release.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, beat the eggs, milk, oil, and vanilla extract until smooth. Gradually mix this wet mixture into the dry ingredients.
  4. Add Boiling Water: Carefully stir in the boiling water. The batter will be thin.
  5. Pour and Bake: Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool for 10 minutes, then transfer to wire racks.
  6. Make the Frosting: In a large bowl, beat the softened butter until creamy, gradually add powdered sugar and cocoa until fluffy. Add vanilla and milk to achieve desired consistency.
  7. Assemble the Cake: Once completely cool, place one layer on a serving platter. Spread frosting on top and place the second layer on top. Frost the entire cake.
  8. Decorate with Bats: Use bat decorations to add a spooky effect.

Notes

Measure properly and don’t overmix for best results. Let the cake cool completely before frosting.
