Delightful fudgy brownies decorated for Halloween, perfect for kids and adults alike.

Ingredients

  • 1 box King Arthur Gluten-Free Ultimate Fudge Brownie Mix
  • 2 large eggs
  • 1/2 cup coconut oil (melted)
  • 2 tablespoons water
  • 1/2 cup full-fat coconut milk
  • 3/4 cup dark chocolate chips
  • 3 tablespoons creamy almond butter (substitute sunflower butter for nut-free)
  • 2 tablespoons unsweetened almond milk
  • 1/2 cup powdered sugar
  • Gluten-free Oreo cookies (approximately 10 for decorations)
  • Edible googly eyeballs (approximately 16 for fun decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8 square baking pan with parchment paper for easy removal.
  2. Mix the eggs, melted coconut oil, and water in a mixing bowl until well combined.
  3. Fold in the King Arthur Gluten Free Ultimate Fudge Brownie Mix until there are no flour clumps remaining.
  4. Pour the brownie batter into the prepared baking pan, spreading it evenly.
  5. Bake in the preheated oven for 28-30 minutes. To check if they’re done, insert a toothpick into the center—if it comes out clean, they are ready.
  6. In a pot, combine the coconut milk and dark chocolate chips over medium-low heat to prepare the ganache. Stir continuously until the chocolate is fully melted and smooth.
  7. Transfer the brownie pan to the freezer and chill for 30 minutes to 1 hour until the ganache is set.
  8. Mix the almond butter, almond milk, and powdered sugar until thick and smooth, then transfer it to a piping bag.
  9. Once the brownies are set, pipe long lines of almond butter icing across the top and decorate with Oreos and edible eyeballs.
  10. Cut the brownies into squares and enjoy!

Notes

Allow brownies to cool before adding ganache to avoid melting. Store in refrigerator for a fudgy texture.
