A comforting and easy dish that combines tender chicken, flavorful potatoes, and crisp green beans all in one pot, perfect for busy weeknights.

Ingredients

  • 4 chicken breasts
  • 6 small potatoes, halved
  • 2 cups green beans, trimmed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker. Season generously with salt and pepper.
  2. Layer the halved potatoes, green beans, chopped onion, and minced garlic on top of the chicken.
  3. Pour the chicken broth over the whole mixture. Sprinkle the Italian seasoning evenly across.
  4. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours. The chicken is done when it reaches an internal temperature of 165°F (75°C) and is no longer pink in the center, and the vegetables are tender.

Notes

Ensure there’s enough space in the slow cooker for steam to circulate. Fresh ingredients can significantly enhance flavor. Taste and adjust seasoning as needed.
