1 onion, diced
2 cups biscuit mix
1 cup milk
Salt and pepper to taste
Optional: parsley for garnish
Instructions
Combine Ingredients: In your slow cooker, add the chicken broth, chicken breasts, carrots, celery, and onion. Stir gently to combine.
Cook the Chicken: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is fully cooked.
Shred the Chicken: Once cooked, remove the chicken breasts and shred them into bite-sized pieces. Return the shredded chicken to the slow cooker, stirring to combine.
Prepare the Dumpling Mixture: In a separate bowl, mix the biscuit mix and milk until just combined; do not overmix.
Add Dumplings: Drop spoonfuls of the dumpling mixture into the slow cooker over the chicken and vegetables.
Finish Cooking: Cover and cook on high for an additional 30 minutes, or until the biscuits are fluffy and cooked through.
Season and Serve: Taste and season with salt and pepper as needed. Garnish with parsley before serving.
