A delightful autumn-inspired dish featuring creamy pumpkin sauce, tender gnocchi, and fresh spinach, perfect for a quick family meal.

Ingredients

  • 1 package shelf-stable potato gnocchi
  • 1 cup pumpkin puree (canned or homemade)
  • 1 cup fresh spinach (washed and roughly chopped)
  • 1/2 pound Italian sausage (sweet or spicy)
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme (chopped)
  • 1 teaspoon fresh sage (chopped)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Cook the sausage in the skillet until browned, about 5-7 minutes.
  3. Wilt the spinach in the skillet for an additional 2-3 minutes.
  4. Add the pumpkin puree and heavy cream, mixing until combined, and cook for 2 minutes.
  5. Season with thyme, sage, salt, and pepper, and simmer for another minute.
  6. Add the gnocchi, stirring until heated through and coated in the sauce, about 3-5 minutes.
  7. Serve immediately while warm.

Notes

Make sure to not overcook the sausage; it should be browned but not dried out. Adjust the pumpkin puree for creaminess as desired.
