A comforting and delightful breakfast dish, this Pumpkin French Toast Casserole features soft bread soaked in a spiced pumpkin custard, perfect for cozy mornings and festive gatherings.

Ingredients

  • 1 loaf of bread (preferably challah or brioche)
  • 1 cup pumpkin puree (canned or homemade)
  • 4 large eggs
  • 1 cup milk (whole or any milk of your choice)
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup butter (melted)
  • 1/4 cup brown sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Greasing your baking dish helps prevent sticking.
  2. Cut the loaf of bread into cubes and place the cubes in a greased 9×13-inch baking dish. Make sure they are evenly distributed.
  3. In a mixing bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt. This will create a creamy base.
  4. Pour the pumpkin mixture evenly over the bread cubes, ensuring every piece is well-coated. This soaking step is crucial for flavor absorption.
  5. In another bowl, mix the melted butter, brown sugar, and cinnamon together for the topping. Sprinkle this blend evenly over the top of the casserole.
  6. Cover the baking dish and refrigerate for at least 30 minutes or overnight. This allows the bread to soak up all the flavors.
  7. Remove the casserole from the refrigerator and bake it uncovered for 35-40 minutes. The top should be golden brown and the center should be set.
  8. Let the casserole cool slightly before serving. This ensures easier slicing and serving.

Notes

Use high-quality bread for the best texture, and feel free to substitute with gluten-free bread if needed. This dish is best served warm.
