A delightful one-pan dish bringing together fresh salmon and zesty lemon orzo, perfect for quick weeknight dinners.

Ingredients

  • 4 pieces of skinless Salmon Fillets
  • 1 cup Orzo Pasta
  • 2 cups Chicken or Vegetable Broth
  • 2 tablespoons Olive Oil
  • Juice from 1 Fresh Lemon
  • 2 cloves Garlic, minced
  • ¼ cup Fresh Parsley, chopped
  • Salt and Pepper, to taste

Instructions

  1. Prep the Ingredients: Gather all your ingredients and prepare them. Mince the garlic, chop the parsley, and season the salmon fillets with salt and pepper.
  2. Cook the Orzo: In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the garlic and sauté for about 1 minute until fragrant. Then add the orzo and stir for 2 minutes.
  3. Add Broth: Pour in the chicken or vegetable broth and lemon juice. Bring to a gentle simmer. Cover the skillet and cook for about 8-10 minutes, or until the orzo is tender.
  4. Sear the Salmon: While the orzo cooks, heat the remaining tablespoon of olive oil in a separate pan over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, until they have a nice golden crust and are cooked through.
  5. Combine and Garnish: Once the orzo is cooked, remove it from heat. Stir in the chopped parsley. Gently place the seared salmon on top of the orzo.
  6. Serve: Squeeze additional lemon juice over the dish if desired, and enjoy!

Notes

Do not overcook the salmon; taste and adjust seasoning as you go. Use a lid to help the orzo absorb the broth properly.
