A rich and flavorful Nigerian Chicken Stew perfect for any occasion, easy to make, and packed with bold flavors.

Ingredients

  • 2 lbs chicken thighs
  • Extra salt and black pepper (for the chicken rub)
  • 3 tomatoes
  • 1 red bell pepper
  • 1 habanero pepper (use 1/2 for less spice)
  • 1 onion (divided)
  • 1/2 cup olive oil
  • 1 cup chicken stock (broth)
  • 1 tsp bouillon powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp curry powder
  • 1/2 tsp salt

Instructions

  1. Wash and pat dry the chicken thighs. This step ensures a good sear on the meat.
  2. Rub the chicken with salt and black pepper, which enhances the flavor of the chicken. Set aside in a bowl.
  3. Heat the olive oil in a large pan over medium-high heat.
  4. Add the chicken thighs and brown on each side for about 10 minutes. You want a nice golden color, which adds depth to the stew. Once browned, remove the chicken from the pan and set it aside.
  5. Cut the onion in half; chop one half into small pieces for sautéing.
  6. Blend together the tomatoes, red bell pepper, habanero pepper, and the other half of the onion until smooth to create a flavorful sauce base.
  7. Sauté the chopped onion in the leftover oil until translucent.
  8. Pour the blended tomato and pepper mixture into the pan and bring it to a boil for about 5 minutes.
  9. Add the chicken back to the pan along with the chicken stock, bouillon powder, black pepper, curry powder, and thyme.
  10. Taste and adjust salt as necessary. Let everything simmer for about 20 minutes, or until the chicken is fully cooked and tender.

Notes

If using chicken breast, adjust cooking time to prevent overcooking. Use fresh ingredients for the best flavor.
