A flavorful and comforting dish featuring tender chicken simmered in a rich, spiced sauce.

Ingredients

  • Chicken Pieces: Bone-in chicken thighs or drumsticks
  • Aromatics:
    • 1 onion, diced
    • 3 cloves of garlic, minced
    • 1 bell pepper, chopped
    • 2 carrots, sliced
  • Spices:
    • 1 teaspoon dried thyme
    • 1 teaspoon allspice
    • 1 teaspoon black pepper
    • Salt to taste
  • Sauce Ingredients:
    • ¼ cup soy sauce
    • 2 tablespoons tomato paste
    • 2 cups chicken broth
  • Oil: 2 tablespoons vegetable oil, for sautéing

Instructions

  1. Season the chicken: In a large bowl, season the chicken pieces with salt, black pepper, thyme, allspice, and soy sauce. Make sure to coat the chicken evenly.
  2. Brown the chicken: Heat vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  3. Sauté the aromatics: Add the diced onions, minced garlic, chopped bell peppers, and sliced carrots to the same pot. Sauté for about 4-5 minutes, or until the vegetables have softened.
  4. Add the sauce ingredients: Stir in the tomato paste and chicken broth, mixing well. Bring to a gentle simmer.
  5. Cook the chicken: Return the browned chicken back into the pot. Cover and simmer for about 30-40 minutes, or until the chicken is tender. Stir occasionally.
  6. Serve: Remove from heat and serve hot over rice.

Notes

Let the stew sit overnight for the flavors to deepen and enhance the taste.
