Ingredients

  • 1 medium pumpkin, cut into cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1 cup shredded cheese
  • 1 lb green beans, trimmed
  • Olive oil, for drizzling
  • Sea salt, to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tbsp butter
  • 1 pre-made pie crust
  • 1 cup chocolate chips
  • 1 cup heavy cream
  • Confectioner’s sugar for decoration

Instructions

  1. Prepare the Roasted Pumpkin Soup
  2. Roast the pumpkin cubes in a preheated oven at 400°F (200°C) for 25-30 minutes.
  3. Sauté the chopped onion in olive oil until translucent, about 5 minutes, then add garlic and cook for another minute.
  4. Blend the roasted pumpkin and vegetable broth in the pot until smooth, adjusting seasoning.
  5. Shape the Skull Meatloaf by mixing ground beef, breadcrumbs, egg, and cheese, then forming it into a skull shape.
  6. Bake the meatloaf at 375°F (190°C) for 45 minutes or until cooked through, allowing it to rest before slicing.
  7. Prepare the sides by tossing green beans with olive oil and salt, then roasting for 15-20 minutes.
  8. Make the mashed potatoes by boiling cubed potatoes for 15 minutes, then mashing with milk and butter.
  9. Create the chocolate pie filling by heating cream until boiling, pouring it over chocolate chips, stirring until smooth, and refrigerating.
  10. Decorate the pie with confectioner’s sugar for a spider web effect before serving.

Notes

For the best flavor, season the soup before blending and allow the meatloaf to rest before slicing.
