Fun and festive Monster Cake Pops paired with savory Jack O’Lantern Peppers, perfect for any Halloween gathering.

Ingredients

  • For the Monster Cake Pops:
  • Cake mix: Any flavor
  • Frosting: Store-bought or homemade
  • Chocolate coating: Candy melts or chocolate chips
  • Candy eyes: For decoration
  • For the Jack O’Lantern Peppers:
  • Orange bell peppers: Firm and fresh
  • Cooked rice or quinoa: For stuffing
  • Black olives: Diced
  • Cheese: Shredded

Instructions

  1. Prepare the Cake Mix: Bake the cake according to the package instructions. Allow it to cool completely before proceeding.
  2. Crumble the Cake: Once cooled, crumble the cake into a large bowl. Add about half a cup of frosting and mix until combined.
  3. Form the Cake Pops: Shape the mixture into balls, about one inch in diameter. Insert a stick into each ball and place them upright in a foam block.
  4. Prepare the Chocolate Coating: Melt the chocolate coating in a microwave or double boiler, stirring until smooth.
  5. Dip the Cake Pops: Dip each cake pop into the melted chocolate, allowing excess to drip off. Decorate with candy eyes while still soft.
  6. Prepare the Peppers: Slice the tops off the orange bell peppers and remove the seeds. Carve jack o’ lantern faces into each pepper.
  7. Make the Filling: Combine cooked rice or quinoa, diced black olives, and cheese. Fill each pepper with this mixture.
  8. Bake the Peppers: Place the stuffed peppers in a baking dish and cover. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, until tender.

Notes

Chill cake pops if they are sliding off the sticks; avoid overstuffing the peppers.
