Indulge in these Halloween Cheesecake Brownies that combine rich, fudgy brownies with a creamy cheesecake swirl, perfect for Halloween gatherings.

Ingredients

  • 350 g Full fat cream cheese
  • 1 large Egg
  • 65 g Caster sugar
  • 1 tsp Vanilla extract
  • Orange food coloring
  • 350 g Dark chocolate
  • 250 g Butter or baking spread
  • 250 g Dark brown sugar
  • 3 large Eggs
  • 120 g Plain flour
  • Black food coloring

Instructions

  1. Preheat your oven to 160°C (350°F/Gas Mark 4). Grease and line a 12″ x 9″ traybake tin to prevent sticking.
  2. In a bowl, whisk together the full fat cream cheese, caster sugar, egg, and vanilla extract until smooth. Add enough orange food coloring to achieve a bright shade and set aside.
  3. In a saucepan over low heat, melt the dark chocolate and butter together. Stir until fully melted, then remove from heat and let cool for 5-10 minutes.
  4. In a large mixing bowl, combine the dark brown sugar and eggs using an electric mixer. Mix until frothy, about 5 minutes. Slowly pour in the melted chocolate and butter mixture while continually whisking.
  5. Sift in the plain flour and gently whisk until just combined. Add enough black food coloring to reach your desired dark shade and gently stir it in.
  6. Pour about two-thirds of the brownie batter into the prepared traybake tin. Spoon the cheesecake mixture evenly over the brownie layer. Finally, add the remaining brownie mixture in blobs on top.
  7. Use a butter knife to gently swirl the two mixtures together, creating a beautiful marbled effect.
  8. Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center still has a slight jiggle.
  9. Allow the brownies to cool completely in the tin before refrigerating. Once chilled, remove from the tin and cut into squares for serving.

Notes

Use quality chocolate for a richer flavor. Make sure to not overmix to keep brownies tender.
