A classic French Onion Pot Roast featuring tender beef and rich caramelized onions, perfect for family dinners.

Ingredients

  • 3-4 lbs beef chuck roast
  • 2 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the ingredients: Slice the onions and mince the garlic. Pat the beef roast dry with paper towels and season it generously with salt and pepper.
  2. Sear the roast: Heat a large pot or Instant Pot on the sauté setting. Add a little oil, then sear the beef roast on all sides until browned (about 3-4 minutes per side).
  3. Cook the onions: Remove the roast and add the sliced onions to the pot. Cook, stirring frequently, for about 5-7 minutes until they start to soften. Add garlic and cook for an additional minute.
  4. Deglaze the pot: Pour in a bit of beef broth, scraping up any brown bits stuck to the bottom.
  5. Add the remaining ingredients: Return the roast to the pot. Add the remaining beef broth, Worcestershire sauce, thyme, and additional salt and pepper to taste.
  6. Slow cook or pressure cook: For slow cooking, cover the pot and cook on low heat for 7-8 hours or high heat for 3-4 hours. For pressure cooking, seal the Instant Pot and cook on high pressure for 60-75 minutes, then allow a natural release.
  7. Serve: Once the roast is tender, slice or shred the meat. Ladle the onion-broth mixture over the top and garnish with chopped parsley.

Notes

Allow flavors to deepen overnight for better taste in leftovers. Don’t skip the searing for enhanced flavor.
