A comforting one-pot meal combining tender chicken, rich French onion soup, and fluffy rice, perfect for family dinners.

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 can (about 10.5 oz) French onion soup
  • 1 cup long-grain white rice (jasmine or basmati)
  • 1 medium onion, sliced thinly
  • 2 cloves garlic, minced
  • 1 cup shredded Gruyère or Swiss cheese (optional)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 ¾ cups chicken broth

Instructions

  1. Sauté the onion in a large skillet with olive oil over medium heat for about 5 minutes until softened.
  2. Push the onions to the side and add the chicken breasts, seasoning with salt and pepper. Cook for 6-7 minutes on each side until golden brown.
  3. Add the minced garlic, stir, and cook for 1 minute. Pour in the French onion soup and bring to a gentle simmer.
  4. Spread the rice evenly over the chicken and onions, then pour chicken broth over the rice, ensuring it’s submerged. Cover and reduce heat to low.
  5. Cook for about 20 minutes until the rice is tender and has absorbed the liquid, checking occasionally.
  6. Melt the cheese on top by sprinkling it over the dish, covering again for 5 minutes.

Notes

Allow the dish to rest for a few minutes before serving to enhance the flavors. Consider adding vegetables or herbs for extra taste.
