A delightful twist on traditional soup with all the flavors of taco night in a warm, comforting bowl.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • Sour cream (optional)
  • Avocado (optional)
  • Cilantro (optional)

Instructions

  1. Brown the beef in a large pot over medium heat until browned. Drain any excess fat.
  2. Add the black beans, corn, taco seasoning, and beef broth. Mix well to combine all the flavors.
  3. Simmer the mixture and let it cook for about 15 minutes so the flavors can meld together.
  4. Gently stir in the heavy cream and shredded cheese until the cheese has melted and the soup is creamy.
  5. Ladle the soup into bowls and top with your favorite optional toppings.

Notes

Don’t rush the browning of the beef for enhanced flavor. Adjust seasonings to your liking and consider using freshly shredded cheese for better melting.
