A hearty blend of ground beef, tender potatoes, and aromatic vegetables, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 3 cups beef broth
  • 1 cup milk
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional toppings: Chopped green onions, shredded cheese, or sour cream

Instructions

  1. Sauté the Beef: In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and transfer the beef to the crock pot.
  2. Chop the Vegetables: Dice the potatoes, carrots, celery, and onion into uniform pieces. Add these vegetables to the crock pot.
  3. Add Broth and Seasoning: Pour the beef broth into the crock pot and stir in minced garlic, salt, and pepper. Mix well to combine.
  4. Cook Low and Slow: Cover the crock pot and set it on low for 6-8 hours, or on high for 3-4 hours. Stir occasionally, if possible.
  5. Blend for Creaminess: Once the cooking time is up, stir in the milk. For a creamier texture, blend a portion of the soup with an immersion blender before adding the milk.
  6. Adjust the Seasoning: Taste the soup and adjust salt and pepper as necessary before serving.
