Ingredients
2 ½ cups all-purpose flour
1 cup unsalted butter, chilled and diced
½ cup granulated sugar
1 tablespoon cold water (more if needed)
2 cups of your favorite pie filling (cherry, blueberry, or lemon)
½ cup cream cheese, softened (optional)
12 large edible candy eyeballs
Red gel icing (for decoration)
Instructions
Mix the ingredients: In a large bowl, combine the flour and sugar. Add the diced butter. Using a pastry cutter or your fingers, mix until it resembles coarse crumbs.
Add cold water, mixing until the dough forms a ball. If it’s too dry, add more water, one teaspoon at a time.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Preheat your oven to 375°F (190°C).
Roll out the chilled dough to a thickness of about 1/8 inch. Cut out circles about 4 inches in diameter.
Fill the pies: Place the cut-out dough circles onto a baking sheet lined with parchment paper. Spoon about 2 tablespoons of pie filling in the center of each circle. Optionally, add a dollop of cream cheese on top.
Fold the dough over the filling to create a half-moon shape. Use a fork to press the edges together to seal.
Bake: Place the pies in the preheated oven and bake for 25 minutes or until golden brown.
Cool: Remove the pies from the oven and allow to cool slightly on a wire rack.
Add a candy eyeball in the center of each pie and drizzle with red gel icing for decoration.
