A delightful and comforting creamy corn soup that is quick to make and perfect for any occasion.

Ingredients

  • 4 cups Fresh or Frozen Corn
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream (or coconut milk for dairy-free)
  • 2 tablespoons Butter or Olive Oil
  • Salt and Pepper, to taste
  • Red Pepper Flakes, optional
  • Fresh Herbs, optional for garnish

Instructions

  1. Sauté the butter or heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the corn kernels and cook for another 2 minutes. Pour in the vegetable or chicken broth, and bring the mixture to a simmer. Let it cook for about 10 minutes to meld the flavors.
  3. Blend the soup using an immersion blender until smooth. Alternatively, transfer it in batches to a blender, allowing it to cool slightly.
  4. Incorporate the blended soup back to low heat. Stir in the heavy cream, seasoning with salt, pepper, and red pepper flakes if using. Heat through without boiling.
  5. Serve the soup into bowls and garnish with fresh herbs if desired. Enjoy hot or at room temperature.

Notes

Use fresh corn when possible for the best flavor. Adjust the thickness of the soup to your liking and consider adding lime juice before serving for a zesty twist.
