A delightful dish combining tender chicken, rich cream, and vibrant vegetables for a comforting weeknight dinner.

Ingredients

  • Pasta (any type)
  • Boneless, skinless chicken breast
  • Heavy cream
  • Fresh baby spinach
  • Sliced button or cremini mushrooms
  • Cherry tomatoes
  • Bacon (optional)
  • Minced garlic
  • Olive oil
  • Salt and pepper
  • Freshly grated parmesan cheese

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Brown the chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and cook for about 6-7 minutes, until browned and cooked through. Remove the chicken and set aside.
  3. Sauté the vegetables: In the same skillet, add more olive oil if needed. Add minced garlic and sliced mushrooms, cooking for 3-4 minutes until the mushrooms are softened.
  4. Make the creamy sauce: Pour in the heavy cream and bring to a simmer, stirring frequently for about 2 minutes.
  5. Add the vegetables and chicken: Stir in the spinach and cherry tomatoes. Add the cooked chicken back into the skillet and season with salt and pepper.
  6. Combine with pasta: Add the drained pasta and toss to coat everything in the creamy sauce and heat through.
  7. Serve and enjoy: Plate the creamy chicken pasta and sprinkle with freshly grated parmesan cheese before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half. Reserve pasta water to adjust sauce consistency if needed.
