A warm and creamy Broccoli Cheese Soup that’s perfect for chilly days, combining fresh broccoli with sharp cheddar cheese for a comforting dish.

Ingredients

  • 1 lb fresh broccoli, chopped
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups vegetable broth
  • 1 cup milk
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Sauté the onions: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until they become translucent, about 3-4 minutes.
  2. Make the roux: Stir in the flour and cook for 1-2 minutes. This will help thicken your soup.
  3. Add the liquids: Gradually whisk in the vegetable broth and milk. Continue stirring until the mixture comes to a simmer and thickens slightly.
  4. Cook the broccoli: Add the chopped broccoli to the pot. Cook until the broccoli is tender, approximately 5-7 minutes.
  5. Incorporate the cheese: Stir in the shredded cheddar cheese until it melts and the soup is smooth.
  6. Season: Taste the soup and season with salt and pepper according to your preference.
  7. Serve hot: Ladle the soup into bowls and enjoy warm.

Notes

Make sure to chop the broccoli into uniform pieces for even cooking. Adjust thickness by adding broth or milk as needed.
