A comforting and nourishing chicken vegetable soup packed with tender chicken, colorful vegetables, and rich flavors in a warm broth.

Ingredients

  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (carrots, celery, green beans)
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs

Instructions

  1. Sauté aromatics: In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.
  2. Brown the chicken: Add the diced chicken breast to the pot. Cook for about 5-7 minutes until it’s browned on all sides. Ensure the chicken is no longer pink in the center.
  3. Add vegetables: Incorporate the mixed vegetables into the pot. Stir well and cook for an additional 3-4 minutes, allowing the vegetables to soften slightly.
  4. Pour in tomatoes and broth: Add the can of diced tomatoes (with juice) and the chicken broth. Stir to combine all ingredients.
  5. Season the soup: Sprinkle in salt, pepper, and dried Italian herbs. Mix well and bring the soup to a boil.
  6. Simmer to perfection: Once boiling, reduce the heat to low and let the soup simmer for 20-30 minutes. This will allow the chicken to cook through and the flavors to meld together.
  7. Serve hot: Taste and adjust the seasoning before serving. Ladle the soup into bowls and enjoy the warmth and comfort it brings.
