A comforting and nourishing Chicken Gnocchi Soup combining tender chicken, pillowy gnocchi, and a rich blend of vegetables, perfect for family dinners.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 8 cups chicken broth
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. Sauté the chicken: Heat the olive oil in a large pot over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the pot and set aside.
  2. Cook the vegetables: In the same pot, add the onions, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are tender. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.
  3. Pour in the broth: Add the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
  4. Add the gnocchi: Stir in the gnocchi and cook for about 3-5 minutes, or until they float to the top, indicating they are cooked.
  5. Shred the chicken: While the gnocchi are cooking, shred the cooked chicken into bite-sized pieces. Add the chicken back into the pot along with the spinach, thyme, salt, and pepper.
  6. Add cream (optional): If desired, slowly stir in the heavy cream. Heat through for another couple of minutes. Adjust seasoning if necessary.

Notes

For an even quicker option, use rotisserie chicken. Adjust seasoning to taste before serving.
