A heartwarming chili recipe combining rich beans, robust spices, and a hint of heat, perfect for cozy nights in or gatherings.

Ingredients

  • 1 pound ground beef (or turkey)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 can (28 oz) crushed tomatoes
  • 1 cup beef or vegetable broth
  • Shredded cheese (for topping)
  • Sour cream (for topping)
  • Chopped green onions (for topping)
  • Fresh cilantro (for topping)

Instructions

  1. In a large pot over medium heat, add the ground beef. Break it apart with a spatula, cooking until browned (about 5-7 minutes). Drain excess fat if necessary. Add the diced onion and bell pepper, sautéing for 5 minutes until softened, followed by the minced garlic for 1 minute.
  2. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper. Cook for another minute to let the spices bloom.
  3. Pour in the crushed tomatoes and broth, stirring to combine. Scrape any browned bits from the bottom of the pot.
  4. Add the rinsed and drained black and kidney beans to the pot, stirring to incorporate all ingredients evenly.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes, stirring occasionally.
  6. Before serving, taste the chili and adjust seasonings as necessary.

Notes

This chili recipe can be easily customized for heat, toppings, and additional vegetables. Leftovers taste even better and can be stored well.
