Ingredients
4 large eggs
2 medium potatoes
1 medium onion
1/4 cup olive oil
Salt to taste
Instructions
Peel and slice the potatoes into thin rounds (about 1/8 inch thick).
Dice the onion finely.
Heat 1/4 cup of olive oil in a large non-stick skillet over medium heat.
Add sliced potatoes and diced onions, seasoning with salt. Cover and cook for about 15-20 minutes.
Crack the eggs into a bowl and whisk until combined. Season with a pinch of salt.
Once the potatoes and onions are cooked, drain excess oil if necessary, and let them cool slightly.
Add the potato-onion mixture to the bowl with the eggs and mix gently.
Pour the egg, potato, and onion mixture into the skillet and cook for about 5 minutes until edges start to set.
Flip the tortilla by placing a large plate over the skillet and inverting it. Slide it back into the skillet to cook the other side for another 5-7 minutes.
Slide the tortilla onto a serving plate and let it cool slightly. Cut into wedges and serve warm or at room temperature.
Notes
For best results, use waxy potatoes like Yukon Gold that hold their shape during cooking.
